在旅游的六要素“吃、住、行、游、購、娛”中，“吃”排在第一位。俗話說：“民以食為天?！笨梢姡皡^(qū)餐飲服務在整個景區(qū)服務中占據(jù)重要地位，它是景區(qū)向游客提供優(yōu)質(zhì)服務的基礎和保障。
1餐飲服務基本要求
當游客進入餐館時他想得到怎樣的食物和服務? 由國家旅游基金會在美國和P＆G公司進行的關于游客喜愛的調(diào)查指出,游客重復購買某商品的原因位于前5位的是:衛(wèi)生,味道,合理的價格,便利的地理位置,舒適的環(huán)境和優(yōu)質(zhì)的服務。
1.1公共衛(wèi)生
就餐者對就餐環(huán)境的衛(wèi)生要求嚴格。它體現(xiàn)出游客對危深感全的需要，而且衛(wèi)生與否直接影響到游客的心情。游客只有在一個整潔衛(wèi)生的地方就餐才會感覺到安全和舒服。游客對就餐環(huán)境的要求體現(xiàn)在以下三個方面：就餐環(huán)境，餐具和食品。顧客總是喜歡在擁有新鮮衛(wèi)生的食品，嚴格消毒的餐具這樣的安全，舒服令人愉快的地方享受美食。
1.2 快速的服務
在用餐時需要快速服務是由于以下原因：
 習慣。由于現(xiàn)代社會的快節(jié)奏只是人們有很強的時間概念而且習慣了固定的生活節(jié)奏。因而，遲緩的服務速度是顧客感到不習慣和不舒服。
 顧客有一個緊密的行程。因為有很多事情要做，所以他們需要快速的服務。
 根據(jù)心理學研究，等待的時間是無聊甚至痛苦的。
 當客人十分饑餓時，等待是不可忍受的。而且當一個人饑餓時，血液里的血糖會降低，從而令人更加容易生氣 ......




Among six essential elements of traveling needs, eating is the first and foremost one. As the saying goes: "Food is the god of people”, food and beverage service is of great importance in scenery service. It is the basic facility of scenic spots to ensure quality service to tourists.
The Fundamental Requirements of Food and Beverage Service
What does a consumer expect to buy and to be received when he enters a restaurant? According to the tourists preference research, conducted by National Tourism Foundation in America and P&G company, the first 5 reasons why the consumer chooses to buy the goods and repeat the buying are sanitation, taste, reasonable price, convenient location, comfortable environment and quality service respectively.
Sanitation
Diners are critical of the condition of sanitation. It reflects tourists' need for security, and it brings immediate influence to guests' mood. Only in a clean and sanitary place can guests feel safe and comfortable. Their requirements lie in three aspects, they are: dining environment, dining utensils and food. Fresh and sanitary food, strictly sterilized utensils and tidy, tranquil environment are always preferable for guests to enjoy delectable food in a safe, comfortable and pleasant environment.
Quick serving
Quick serving is required when dining due to the following reasons:
•Habit. The fast pace of modern society cultivates people's sense of anxiety of time and develops a fixed fast psychological rhythm. Therefore slow pace makes them feel unaccustomed and uncomfortable.
•Guests have a tight schedule. Many things are awaiting them afterward, so they expect fast serving.
•According to a psychological research, the duration before the expected things appear is boring and even suffering ......
